Ingredients

Serving Size: 230g

Salad:

  • 3 cups drained Frijoles de Olla Negros DucalĀ®
  • 1 cup drained sweet corn kernel
  • 4 tablespoons red onion
  • 1 cup thinly sliced cucumber
  • 2 cups lettuce, cut into strips
  • 2 cups ripe tomato, diced
  • 2 units of avocado cut into squares

Vinaigrette:

  • 3 tablespoons apple cider vinegar
  • 2 tablespoons lemon juice
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon yellow mustard
  • 1/3 cup olive oil
  • 3 tablespoons vegetable oil
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 teaspoon honey

Preparation

  1. Place all ingredients in a jar or container with a lid and shake very well before use.
  2. On a flat plate serve a bed of lettuce as a base.
  3. On top go placed, separately all the other elements of the salad.
  4. With a spoon spread the vinaigrette over to taste.
  5. Serve with crackers or nachos.
