Serving Size: 160g

Pibil sauce:

  • 1 teaspoon achiote paste
  • 1/3 cup orange juice
  • 3 tablespoons oil
  • 1 tablespoon minced garlic
  • 3 tablespoons white onion
  • 1 pinch oregano and salt
  • 1 unit of Castile pepper
  • 3 units of chicken breast

For the assembly of the burrito:

  • 2 cups drained Frijoles de Olla Negros Ducal®
  • 2 cups shredded lettuce
  • 5 units of large flour tortillas
  • 1/2 cup thinly striped red onion


Preparation of chicken pibil:

  1. Place all the ingredients in a bowl and blend very well.
  2. Place the chicken breasts in a small pot and add the pibil sauce.
  3. Cook over medium heat until the chicken is soft and the sauce reduced by half(approximately 15min).
  4. Let cool to room temperature, remove the chicken breasts and fray.
  5. Place back in the sauce mixing very well and heat again before using inside the burrito.

Assembling the burrito:

  • Lightly heat the flour tortillas, inside place the lettuce, beans, red onion in strips and chicken pibil.
  • Fold the burrito into a half moon and place it for a few seconds in a hot pan to seal the tortilla, brown on both sides.
  • Serve immediately, accompanied by pico de gallo and hot sauce to taste.
