Ingredients
Serving Size: 160g
Pibil sauce:
- 1 teaspoon achiote paste
- 1/3 cup orange juice
- 3 tablespoons oil
- 1 tablespoon minced garlic
- 3 tablespoons white onion
- 1 pinch oregano and salt
- 1 unit of Castile pepper
- 3 units of chicken breast
For the assembly of the burrito:
- 2 cups drained Frijoles de Olla Negros Ducal®
- 2 cups shredded lettuce
- 5 units of large flour tortillas
- 1/2 cup thinly striped red onion
Preparation
Preparation of chicken pibil:
- Place all the ingredients in a bowl and blend very well.
- Place the chicken breasts in a small pot and add the pibil sauce.
- Cook over medium heat until the chicken is soft and the sauce reduced by half(approximately 15min).
- Let cool to room temperature, remove the chicken breasts and fray.
- Place back in the sauce mixing very well and heat again before using inside the burrito.
Assembling the burrito:
- Lightly heat the flour tortillas, inside place the lettuce, beans, red onion in strips and chicken pibil.
- Fold the burrito into a half moon and place it for a few seconds in a hot pan to seal the tortilla, brown on both sides.
- Serve immediately, accompanied by pico de gallo and hot sauce to taste.
