Ingredients
Serving Size: 230g
Salad:
- 3 cups drained Frijoles de Olla Negros Ducal®
- 1 cup drained sweet corn kernel
- 4 tablespoons red onion
- 1 cup thinly sliced cucumber
- 2 cups lettuce, cut into strips
- 2 cups ripe tomato, diced
- 2 units of avocado cut into squares
Vinaigrette:
- 3 tablespoons apple cider vinegar
- 2 tablespoons lemon juice
- 1/2 teaspoon dried oregano
- 1/2 teaspoon yellow mustard
- 1/3 cup olive oil
- 3 tablespoons vegetable oil
- 1/4 cup chopped cilantro
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 teaspoon honey
Preparation
- Place all ingredients in a jar or container with a lid and shake very well before use.
- On a flat plate serve a bed of lettuce as a base.
- On top go placed, separately all the other elements of the salad.
- With a spoon spread the vinaigrette over to taste.
- Serve with crackers or nachos.
