Ingredients
- 2 cups of Ducal Black Beans
- 2 liters of water
- 1 sweet chili finely chopped
- ½ sweet chili chopped very fine
- ½ teaspoon of Oregano
- 1 sprig of celery, garlic, salt and pepper
- 1 chopped onion
- 2 hard-boiled eggs, sliced
- ½ finely chopped onion
- 1 bunch of cilantro (leave for final decoration)
- 1 teaspoon salt and pepper
Preparation
- Cook the beans with the garlic, the coriander roll, oregano, celery, sweet chili in strips, salt and pepper, in plenty of water (approximately 1 hour or until soft)
- Immediately after cooking, blend them in a food processor.
- Later, in a pot, sauté a clove of garlic and a chopped onion and the other finely chopped sweet chili. When they are transparent, add the ground beans and test the seasoning (make sure it is well seasoned with salt).
- Finally, let it cook for a few more minutes and if it is very thick, add hot water, it should have a creamy consistency.
- It is served in individual plates and accompanied with egg, onion and chopped cilantro.
