Ingredients

  • 2 cups of Ducal Black Beans 
  • 2 liters of water 
  • 1 sweet chili finely chopped 
  • ½ sweet chili chopped very fine 
  • ½ teaspoon of Oregano 
  • 1 sprig of celery, garlic, salt and pepper 
  • 1 chopped onion 
  • 2 hard-boiled eggs, sliced 
  • ½ finely chopped onion 
  • 1 bunch of cilantro (leave for final decoration) 
  • 1 teaspoon salt and pepper 

Preparation

  1. Cook the beans with the garlic, the coriander roll, oregano, celery, sweet chili in strips, salt and pepper, in plenty of water (approximately 1 hour or until soft) 
  2. Immediately after cooking, blend them in a food processor. 
  3. Later, in a pot, sauté a clove of garlic and a chopped onion and the other finely chopped sweet chili. When they are transparent, add the ground beans and test the seasoning (make sure it is well seasoned with salt). 
  4. Finally, let it cook for a few more minutes and if it is very thick, add hot water, it should have a creamy consistency. 
  5. It is served in individual plates and accompanied with egg, onion and chopped cilantro.
