Ingredients
- 15oz No Salt Added Black Beans, rinsed
- 1 Ground Cumin
- 4 White Bolillos
- 1 cup large avocado, peeled and cubed
- 1 cup iceberg lettuce, shredded
- 1 fresh garlic clove(s), minced
- 1/2 cup Peppers
- 1/4 cup pickled jalapeños, stems removed, seeded and chopped
- 1/2 red onion, sliced
- 1 Roma tomato, sliced
- 1/3 Queso Fresco
Preparation
- Place black beans in a microwave-safe bowl and microwave 3 minutes or until beans are heated through.
- Using a fork, mix cumin in beans and mash, leaving some whole.
- For each sandwich, spread a layer of beans on both sides of buns.
- Layer avocado, lettuce, garlic, peppers, jalapeños, onion, tomato and queso fresco on bottom bun and top with remaining bun.
