Ingredients

  • 15oz No Salt Added Black Beans, rinsed 
  • 1 Ground Cumin  
  • 4 White Bolillos  
  • 1 cup large avocado, peeled and cubed  
  • 1 cup iceberg lettuce, shredded  
  • 1 fresh garlic clove(s), minced  
  • 1/2 cup Peppers  
  • 1/4 cup pickled jalapeños, stems removed, seeded and chopped  
  • 1/2 red onion, sliced  
  • 1 Roma tomato, sliced  
  • 1/3 Queso Fresco 

Preparation

  1. Place black beans in a microwave-safe bowl and microwave 3 minutes or until beans are heated through. 
  2. Using a fork, mix cumin in beans and mash, leaving some whole. 
  3. For each sandwich, spread a layer of beans on both sides of buns. 
  4. Layer avocado, lettuce, garlic, peppers, jalapeños, onion, tomato and queso fresco on bottom bun and top with remaining bun.
