• 6 large eggs, beaten 
  • 1 cup grated Monterey jack cheese with jalapenos 
  • 3 tablespoons canola oil 
  • 2 corn tortillas, cut into thin 1/4-inch strips 
  • 15 ounces Ducal Black Beans 
  • 1 1/2 cups canned corn, drained 


  1. Heat a large nonstick skillet over high heat for 2 minutes and preheat oven to 375°F. 
  1. Add the oil and tortilla strips and stir fry for 2 minutes or until golden. Drain tortilla strips on a paper towel. 
  1. Beat eggs, add corn and drained beans. 
  1. Place egg mixture in a cast-iron skillet sprayed with nonstick cooking spray and top with shredded cheese. 
  1. Bake 8 to 10 minutes or until center is firm. Garnish with tortilla strips and serve
