Ingredients

  • 2 cup(s) black beans, rinsed and drained  
  • 1 medium shallot, finely minced or grated  
  • 1 cup(s) Panko bread crumbs  
  • 3 1/2 Oz can of chipotle peppers in adobo sauce, minced  
  • 1 large egg  
  • 1/2 Tsp kosher salt  
  • 1 garlic, finely minced  
  • 2 Tbsp grapeseed oil 

Preparation

  1. In a large bowl, add black beans and smash them with a large spoon or fork. Make sure they are well mashed, but not completely pureed. 
  2. In the same bowl, add all remaining ingredients except grapeseed oil. Season mixture to taste with salt and pepper. Refrigerate the black bean mixture for 15-20 minutes to allow flavors to meld. 
  3. When ready to cook, remove bean mixture from the fridge and form into patties with your hand, set on wax or parchment paper until ready to cook. Place grapeseed oil in a bowl and brush each burger with the oil. Set in an oven safe pan. 
  4. For broiling your burgers, set rack approximately 8 inches from the broiler and cook for about 3-5 minutes per side or until they have an internal temp of 145˚F and a crispy top. Serve with your favorite fixings. This is great served on lettuce too. 
  5. If grilling, place foil down on your grill and spray with non stick cooking spray. Cook burgers on foil lined grill for 5-6 minutes per side or until internal temperature reads 145˚F. 
  6. Serve on your favorite bun or as a lettuce wrap.
