Ingredients

  • 2 cups of Maseca 
  • 1 teaspoon marinade without pepper 
  • 3 cups of hot water 
  • 16 ounces of Ducal Red Beans 
  • 8 ounces of grated white cheese 
  • To accompany: coleslaw or curtido 

Preparation

  1. In a container combine the Maseca, Adobo and 2 cups of water. Mix until water is absorbed. Using your hands, knead the Maseca mixture, adding any remaining water, a little at a time, until a moist dough forms (you may not need all the water). 
  2. Using your hands, take 3 tablespoons of dough and roll it into a ball. Flatten into a round disk measuring 5" and 1/8" thick; Repeat with the rest of the dough until you make 16 disks, covering the dough and disks with a damp cloth as you work. Spread 1 tablespoon beans or cheese evenly over first disk. Season with the Adobo. Cover with another disc; Fold bottom edge over top to seal. As a variant, you can combine the beans and cheese in the same pupusa. Repeat using the remaining dough discs, beans and cheese until you make 8 pupusas. 
  3. In a hot, greased grill or medium skillet, grill the pupusas until golden brown on both sides, turning once, for 6-8 minutes. 
  4. Serve hot with coleslaw on the side.
